Tasting note
Intense purple red, the first impressions on the nose are reminiscent of dark chocolate. Notes of black cherries, tobacco, spices, and black pepper. Full and pleasantly berry on the palate with well-integrated tannins. Dense and long aftertaste. The name Eimi comes from Greek and means “I am.”
Culinary recommendation
Goes well with brasato, grilled beef, game, mature cheese.
Vinification
Fermentation for 15 days at 25°C. Ageing: 12 months in new and used barriques
