About the wine

It all began in 1790 when the 25-year-old son of a Scottish wealthy carpenter asked his father for a £300 loan to establish himself as a wine merchant in London. This ambitious young man was George Sandeman, the founder of Sandeman, who eventually founded one of the world's leading port and sherry wine companies. From an early age, Sandeman specialized in these two great Iberian fortified wines and, following a common practice at the time, began to trade not from its own offices, but from Tom's Coffee House in Birchin Lane, London. The deal was agreed on a “gentleman's word” and George soon gained an impeccable reputation that is characteristic of Sandeman to this day.

Culinary recommendation
Goes well with aperitifs and also accompanies fish and seafood.
Vinification
The barrels are only about three-quarters full so that pile yeast can form on the surface of the wine, to which the typical sherry note can be attributed. If finished wine is removed from the bottom barrel, the corresponding amount must be refilled from the barrel above it. Finally, young, freshly produced wine is added to the top barrel.
