Tasting note
Fragrant of flowers, Mediterranean berries and pepper. Lots of pepper. Warming and fresh on the palate at the same time with intensely spicy flavors and a long finish.
Culinary recommendation
Goes well with aperitif plates, ripe cheeses, sausages and grilled food.
Vinification
Spontaneous fermentation with local yeasts in open containers and without temperature control. Maceration on the skins. 5 months of aging in used wood and earthenware amphorae. The wine is then aged in the bottle for 5-10 months.
