Tasting note
Light lemon yellow - the nose with nuances of Asian pears and fresh fennel, plus quince and pink grapefruit. Similar aromas are repeated on the palate and, in combination with the outstanding texture and the fresh, citrusy “finish”, result in exactly the wine that can be used as a synonym for what is possible from Chenin Blanc from slate soils.
Culinary recommendation
Goes well with fresh seafood, light salads or goat cheese.
Vinification
The grapes are harvested by hand and fermented in stainless steel tanks at controlled temperatures.
