Tasting note
Intense ruby red. On the nose, fruity notes of cherries and plums, followed by spicy notes of pepper and nutmeg. The tannin is soft and silky, with a velvety and broad aftertaste.
Culinary recommendation
Highly recommended with spicy pasta dishes, risotto, vegetable gratins, roasts and ripe cheeses.
Vinification
The grapes are vinified separately according to grape varieties. Fermentation and maceration for 25/30 days in steel tanks, at a controlled temperature not exceeding 28/30°C. Second fermentation in 225 lt French oak barrels. Aging for 18 months in barriques and in bottle for a further six months before sale.
