Vinification
A blend of 60% Pinot Noir, 38% Pinot Meunier and 2% Pinot Précorce. The Pinot Noir and Pinot Meunier are fermented in steel tanks. 8% are fermented in old Burgundy barrels and there is partial biological acid degradation. The wine is resting 5 months
