Tasting note
The La Senoba is deep cherry red with ruby red reflections. On the nose, intense aromas of ripe black fruits such as blackberries and black currants develop, accompanied by balsamic and spicy notes as well as hints of cocoa and vanilla. On the palate, it is powerful yet elegant, with a velvety texture, well-integrated tannins and refreshing acidity. The aftertaste is long-lasting and harmonious.
Culinary recommendation
It goes well with grilled meat, lamb dishes, game and aged cheese.
Vinification
After careful handpicking, cold maceration takes place at 9 °C for at least six days before alcoholic fermentation begins in wooden barrels with a capacity of 4,000 to 6,000 liters. It is aged for 18 months in French and Hungarian oak barrels.
