Tasting note
The bright nose shows notes of flint, ginger, white fruits and a whiff of smoke. Compact and puristic in the first drink. A dynamic mix of energy, juiciness and residual sweetness shapes the palate.
Vinification
The grapes are harvested by hand and then spontaneously fermented in steel tanks, without subsequent inoculation or addition of enzymes. Artificial acidification or deacidification never existed and never will exist. After a long yeast storage period, the wines are minimally sulfurized and closed with a screw cap.
