Tasting note
This Riesling cabinet is semi-dry (15g/l residual sugar), but tastes absolutely dry. In the nose, it starts slightly reductively. With a little air, intense slate seasoning, flint, orange peels and Mediterranean herbs come out. Crunchy and compact on the palate, plus a fine saline, chalk minerality on the persistent finish, with good aging potential!
Vinification
The grapes are harvested by hand and then spontaneously fermented in steel tanks, without subsequent inoculation or addition of enzymes. Artificial acidification or deacidification never existed and never will exist. After a long yeast storage period, the wines are minimally sulfurized and closed with a screw cap.
