About the wine
At the beginning of 2000, the estate was purchased by Roman Niewodniczanski, restored and expanded to include numerous prime locations or replaced less good locations. The current size of around 75 hectares, which are located almost exclusively in the core zones of the renowned Saar steep slopes, is impressive. The aim is to produce wines with a high harmony of ingredients that are digestible on the palate and embody pure drinking pleasure. The characteristics of every vineyard location should be optimally expressed, with the results being predominantly dry-aged, mineral-rich wines with ripe fruit and low alcohol content.

Tasting note
On the nose, this Riesling Cabinet shows aromas of ripe yellow fruits, red apples and citrus fruits as well as a minerality reminiscent of flint. Semi-dry on the palate with lots of juiciness and lightness. The aftertaste is dominated by notes of citrus fruits, plus a fine, salty minerality.

Vinification
Low average yields and selective manual harvesting. The grapes are gently pressed and then spontaneously fermented using wild yeasts, partly in large wooden barrels and partly in steel tanks. When stored on fine yeast for a few months, the wine gains additional complexity and creaminess. The wine is bottled without fining. All Van Volxem wines are vegan. No fining agents or wine treatment agents are used that have animal ingredients or are of animal origin.
