Tasting note
The Niedermenniger Sonnenberg Spätlese Alte Reben 2025 is intensely on the nose. Aromas of apricot, mandarin, orange and lychee are harmoniously combined with fine notes of basil and other herbs. Juicy yet fresh on the palate, a crunchy acidity ensures a perfectly integrated residual sweetness. The wine impresses with its wonderful lightness and elegance, shows a lot of draft and ends with a long, citrusy yet delicately salty finish.
Vinification
The harvest is meticulously sorted in order to bring the best quality to the cellar and to be able to dispense with any treatment and refining agents. Whole grape pressing and then spontaneous fermentation with wild yeasts in stainless steel tanks and maturing on full yeast.
