Vinification
Average low yields and selective manual harvesting. The grapes are gently pressed and then spontaneously fermented in stainless steel tanks using wild yeasts. Storage for ten to eleven months on the fine yeast in wooden barrels gives the wine additional complexity and creaminess. The wine is bottled without fining. All Van Volxem wines are vegan. No fining agents or wine treatment agents are used that contain animal components or are of animal origin.
