About the wine
Typical long morning. Southeast slope, red, yellow and white colored sandstone in the topsoil, a high percentage of lime in the subsoil, vines over 40 years old. The fermentation lives up to the name of the vineyard; it usually takes a very long time.

Tasting note
On the nose, typical bright, yellow and chalky notes with a slight briocheton. On the palate, the long finish with very delicate acidity.
Vinification
The grapes were selectively harvested by hand in several rounds at ideal physiological ripeness. After pressing gently and slowly, the grapes were fermented with the vineyard's own yeasts. The maturation in stainless steel tanks took place first on full yeast and then on fine yeast.
