About the wine

Tasting note
This Riesling shines in golden yellow with slight green reflections. On the nose, it impresses with an endless variety of aromas of ripe peaches, pineapples, apricots, mirabelles and so on... On the palate, it is pleasantly sweet with a beautifully balanced acidity and a very long finish. A sweet wine for special moments.

Goes well with all kinds of sweets, cheese, foie gras, terrines, pastries or simply as a meditation wine in between meals...
Vinification
The Riesling grapes come from Binger Scharlachberg, one of the largest Riesling vineyards in Germany. With climbs of up to 40%, this is an extremely demanding job that does not always appear harmless. The interpretation of this quartzite Riesling is a particular challenge for the Runkel brothers. At the end of October, the grapes are harvested in boxes of around 25 kilograms on the vine, rotten and fully ripe. In terms of must weight, this selection can actually be classified as a berry selection. Before pressing, the grapes are ground in an old mill and left to stand on the mash for about 8 hours to reach the sugar concentration of around 115g RZ/liter. The must is then spontaneously fermented in steel tanks until alcoholic fermentation slowly reaches 7.5% alcohol by volume. The wine is then cold-stabilized at around 5° Celsius so that no secondary fermentation can take place. This sweet wine is then aged in steel tanks for about 8-10 months before being bottled after yeast filtration.
