Tasting note
The grapes are harvested by hand between the end of August and the beginning of September. White winemaking and gentle pressing of the grapes. All musts (Chardonnay & Pinot Noir) are fermented in stainless steel, where they remain until the cuvée is produced. The wine undergoes a second fermentation in the bottle, followed by traditional aging on yeast for at least 30 months.
Culinary recommendation
Excellent food companion. Highly recommended Apero Spumante.
