About the wine

Working as a sideline in viticulture since 1890, the Knoll family has dedicated themselves entirely to viticulture in Würzburg since 1980 and has been setting accents in the Franconia wine-growing region ever since with their enthusiasm for experimentation, wines and, last but not least, architectural accents. The winery (VDP member since 2001) owns 25 ha. Many steep slopes are sometimes so densely tilled that every job there is really done by hand, and that's a lot in biodynamic viticulture, where all chemical “helpers” are dispensed with. In the basement, there is also the courage to do without and experiment, e.g. expansion in concrete. This is modern, new ways in harmony with nature! Independent and direct wines, individualists with a good soul, for and not against. Great personalities that are now available in Switzerland for the first time!

Tasting note
Freak-out. Hard substance, a little yeasts and ripe stone fruits, a touch of honey, ok, that too, but otherwise: in your face, dense, direct, tart minerality. On the palate, a punch, no warm words, no gentle foam, goes out of itself, quick-tempered perlage, coarse minerality, completely undisguised, then comes to rest a bit, creamy now, ripe yellow fruit, sweet-tart apple, spicy and musty, is a hell of a lot of fun. Bone-dry eccentric wild and uncontrolled, fascinating energy, more cider than champagne. Or as the winemaker says: Pure, naked, raw, unpolished. Each bottle is unique, very limited, very cool!
Culinary recommendation

Vinification
Selective harvesting of the highly ripe grapes by hand. Pét-Nat process (Pétillant naturel = natural sparkling wine): In the middle of fermentation, when the wine still has enough residual sugar, it is already bottled, where it continues to ferment - uncontrollably - and becomes a frother, no fining, no filtration, no sulfurization.
