Tasting note
Straw yellow with greenish reflections with a fine and persistent perlage. Fruity and floral scents with a predominance of green apple, peach and hints of acacia blossom and jasmine; when fresh, a soft, sweet note is perceived, which then turns into a sour note.
Culinary recommendation
Ideal as an aperitif, with starters and fish dishes. Goes well with cream desserts and fresh fruit.
Vinification
White vinification by gentle pressing at a controlled temperature and with selected yeasts; fermentation according to the Martinotti method (Charmat), slow fermentation for at least 45 days at low temperature.
