Tasting note
The Prosecco Superiore Brut from Daldin impresses with its brilliant straw yellow with green reflections. Aromas of citrus fruits, green apple, white peach and bright flowers caress the nose. The palate is pleased with the wonderfully fine perlage, the subtle and elegant fruit aromas and the dry, refreshing yet slightly creamy type. A very sapid and extremely elegant prosecco with lots of charm and an aromatic finish.

Vinification
The production area of DOCG prosecco is in the province of Treviso in Veneto. It comprises a total of 15 municipalities. The grapes for this Prosecco come without exception from selected locations in the hills of Valdobbiadene. This zone is considered the most distinguished for high-quality prosecco. After harvesting, the grapes are lightly pressed and the juice is fermented in stainless steel tanks at constantly cool temperatures. The second fermentation is then carried out according to the Charmat method in the pressure vessel, in which the resulting carbon dioxide is retained in the wine. The prosecco ferments there for at least 30-40 days to obtain a pleasant mousse before remaining on the fine yeast for another 1-3 months. It is then stabilized, sterile-filtered and bottled.
