Vinification
The brood comes from a cru called Vigna del Cuc in the village of Case Bianche (Conegliano). After fermentation in steel, sparkling wine is made using the Charmat method. The procedure, until reaching 5 atm, takes 60 days. The residual sugar is 7.4 g/l, acidity: 6.42 g/l, dry extract 29.2 g/l.
