Tasting note
The Prosecco Daldin impresses with its brilliant straw yellow with green reflections. Aromas of melon, peach, citrus and white flowers caress the nose. On the palate, the fine perlage and the optimal balance between fruit sweetness and refreshing acidity are pleasing. An extremely elegant prosecco with an aromatic finish and wonderful perlage.
Culinary recommendation
Ideal for an aperitif or as an addition to modern 'in-drinks' such as Hugo, aperitif spritz, etc.
Vinification
The production area of DOCG prosecco is in the province of Treviso in Veneto. It comprises a total of 15 municipalities. This DOC Treviso Prosecco does not specify a locality and harvests grapes from different municipalities at the foot of the two hills of Conegliano and Valdobbiadene. After harvesting, the grapes are lightly pressed and fermented in stainless steel tanks at consistently cool temperatures. The second fermentation is then carried out according to the Charmat method in the pressure vessel, in which the resulting carbon dioxide is retained in the wine. There, the prosecco ferments on the fine yeast for at least 20-30 days to obtain a pleasant mousse before it is stabilized, sterile-filtered and bottled.
