Tasting note
Light straw yellow color with a fine and persistent perlage. The scent is delicate, with citrus aromas, fern, almond and pleasant mineral notes. The palate is fresh, soft, creamy and with good taste.
Culinary recommendation
Goes well with fish and meat appetizers.
Vinification
Manual harvest in early September. Vinification of white grapes with soft pressing. Fermentation in stainless steel tanks for approx. 11 — 13 days at 28°C. Sparkling wine fermentation using the Charmat Martinotti method for 30 days. After that, aging in the bottle for approx. 3 months.
