Tasting note
Brilliant fresh bouquet, complex, notes of lemons, quinces, roses. Quite full and with good but not aggressive acidity, nice honey and quince notes, some minerals, long-lasting. Very balanced Sauvignon Blanc, milder than the typical Sancerre.
Vinification
Gravity pressing without destemming preserves the finesse of Sauvignon Blanc grapes. In order to express the diversity of the terroir during aging, the estate selects the appropriate containers for each terroir and allows the various wines to mature on lees in stainless steel tanks, barrels, amphoras or concrete vats for four months.
