Tasting note
Intense color with slight copper reflections. On the nose, aromas of acacia flowers and ripe fruit. Fascinating and persistent minerality on the palate. On the finish, an enveloping spice.
Culinary recommendation
Goes well with beef tartare, tuna tartare, poultry and semi-ripe cheeses.
Vinification
Mash fermentation for 15-20 days, then the wine matures for almost a year in amphoras, followed by a further 8 months in the bottle.
