Tasting note
The wine has a fresh herbal flavor, despite all its depth and powerful energy. Insanely playful and complex in the nose. First bay leaf, then clove, also licorice, or rather licorice. The fruit contains beguiling cassis, elderberries, blackberries and blueberries. There's always a whiff of white pepper behind everything. Insanely subtle, not a trace of fat. Pure subtlety. The mouth is fantastically juicy and mouthwatering. Fresh acidity and fine tannin go hand in hand. That creates tremendous tension.
Vinification
The grapes are completely destemmed and also completely fermented without stems. The aging takes place in used barriques and used and new tonneaux.
