Tasting note
A Pinot Nero of deep ruby red color that seduces the nose with complex aromas of dark berries, fine spices and a touch of subtle wood. On the palate, it shows impressive finesse: fresh acidity and soft tannins combine to create an elegant, silky texture that balances the wine.
Culinary recommendation
It goes well with grilled meat, especially lamb or beef, as well as with game dishes. Pasta with intensive sauces or mushroom risotto also harmonize with its complex aromas.
Vinification
Fermentation takes place in temperature-controlled stainless steel tanks, deliberately avoiding the traditional “pigeage” — the manual or mechanical immersion of the pomace hat. Instead, only gentle pumping processes take place to keep extraction as low as possible. The malolactic fermentation takes place in cement tanks before the wine is transferred to French oak barriques. There it matures for twelve months in second and third coated barrels. The wine is then assembled in a large cement tank and stored for a further six months to harmonize its structure and aromas.
