Tasting note
Delicately scented of citrus, white peach and floral notes, plus a touch of exotic fruit and fine mineral notes. Firm, elegant and complex on the palate, with a vibrant acidity and a long, crystal-clear finish.
Culinary recommendation
Excellent with fine fish dishes such as sole, scallops or lobster. Also great with white poultry, asparagus or burrata with citrus vinaigrette. Ideal for fine, aromatic and restrained cuisine.
Vinification
The harvest took place at the beginning of September under ideal conditions — healthy grapes, slow aging, perfect balance of freshness and concentration. The Sauvignon Blanc grapes come from carefully selected plots, which are vinified individually. The ultra-modern winery produces a white wine of remarkable precision and clarity. Only part of the harvest is used for Pavillon Blanc, for the highest quality and an even more precise style.
