Tasting note
Intense ruby red. On the nose, notes of ripe cherries, raspberries and hints of vanilla. On the palate, intense aromas of sour cherries and plums, plus light spicy notes. velvety, with a full body, fine tannins and a long aftertaste.
Culinary recommendation
Goes well with rabbit ragout or spicy ratatouille
Vinification
Manual harvest, 8-day maceration, fermentation in steel tanks and half aging in barriques & concrete tanks.
