Tasting note
Blackberries, blackcurrants and chocolate intoxicate the nose and then find themselves in the mouth, enhanced by a touch of tobacco and black pepper on the finish.
Culinary recommendation
Goes well with aged cheese and second courses based on red meat.
Vinification
Harvest: 1st decade of October. Vinification: Long maceration of the skins for 45 days. Fermentation in stainless steel tanks at a temperature of 28-30°C.
