Tasting note
The first individual layers of champagne vinified entirely under the aegis of oenologist Christophe Constant. The Pinot Noir grapes come from the “Le Poteau” plot in the Grand Cru community of Bouzy. The base wine was aged partly in oak barrels and partly in steel tanks. Inviting nose with aromas of black cherries, fresh figs, dark berries and a hint of dried plum, underpinned with subtle floral scents and fine mineral spice. Tacky and full-bodied on the palate, showing fine tannin structure, but with juicy fruit and good freshness.
Culinary recommendation
Goes well with more hearty dishes, such as dishes with mushrooms or pies and terrines, but also with grilled fish and seafood, such as octopus with grilled peppers and black olives.
