Tasting note
Pure excitement! Chardonnay. Vinified like a red wine. Fermented on the mash. Citric on the nose, slightly petrolic, reminiscent of ripe Riesling. Surprising on the palate. Dried apricot, fig, slightly bitter. Long finish.
Culinary recommendation
Goes well with tarte flambée with pear, goat cheese with honey or a grilled fish fillet, plus a tomato and olive concassée.
