Tasting note

Vinification
We start with a two-day cold maceration before fermentation, then let the alcoholic fermentation and a couple weeks of maceration do their thing. Both alcoholic and malolactic fermentations happen in temperature-controlled stainless steel tanks. After that, the individual grape varieties are blended into the final cuvée and given some time to develop.
