Tasting note
Color: Straw yellow with greenish reflections, bright and bright. Perfume: Aromatic and fresh, characterized by delicate notes of white flowers such as hawthorn and hints of white flesh, particularly green apple and peach. A touch of alpine herbs rounds off the bouquet and gives it a fresh and mineral note. Taste: Dry, lively and fresh on the palate, with balanced acidity and slight minerality. The structure is slim and balanced, with a slightly aromatic finish that is reminiscent of the fruity and floral sensations of the nose. On the palate, there are notes of citrus and a pleasant freshness, which make it extremely pleasant and inviting to drink.
Culinary recommendation
It goes well with an aperitif, but also with light fish and seafood dishes, seafood salads and delicious first courses. Also great with cream cheese and vegetarian dishes such as grilled vegetables or summer salads. Also ideal as a side dish for starters based on fish carpaccio or tartare.
Vinification
The grapes are harvested manually and vinified by gentle pressing. The must is fermented at low temperatures to preserve the aromatic integrity of the vine, followed by a brief aging on the yeasts to improve olfactory complexity and softness on the palate.
