About the wine

Tasting note
Ruby red color; intense, very rich bouquet with notes of cherries, ripe black berries and spicy wood. On the palate, it is juicy and full-bodied, with excellent structure and elegant tannins. Its finale is wonderfully fiery and full of character. A dream Valpolicella!
Culinary recommendation
Goes well with barbecues, roasts and aged cheeses.
Vinification
The grapes are picked by hand and fermented in thermoregulated steel tanks after strict selection. In January, dried grapes are added to the young wine to initiate a second fermentation, which gives the wine a higher alcohol content, richness of color and tannin. The young wine ages for 18 months in large Slavonian oak barrels, for a further four months in 600 l cherry wood barrels and finally in the bottle for six months.
