About the wine
If we can offer something special for Christmas 2021, it's this distinctive red wine 2019 — Merlot Reserve. With experience and intuition, the winemaker from the South African winery Thelema Mountain Vineyards masters this red wine in the enchanting and graceful landscape of the Coastal region. Tasting note
This wine is a blend of the best plots of our Merlot vineyards. Notes of violets, sweet, zesty black plum fruits and a wonderful undertone of graphite. On the palate, there are layers upon layers of black and blue berries, espresso notes and fabulous depth.
Culinary recommendation
Goes very well with a creamy wild mushroom risotto with Parmesan and arugula or rich pasta dishes.
Vinification
The moderate weather during the growing season led to optimal ripening conditions for the fruits with a high natural acid content and a very good flavor concentration. The grapes were destemmed, sorted by hand and pumped into stainless steel tanks. The mash was inoculated with cultured yeasts and during fermentation, the wine was pumped around once a day until the desired degree of color and tannin extraction was achieved. After fermentation, the wine is pressed and transferred to barrels for malolactic fermentation. The further aging took place for 18 months in new French oak barrels.
