Tasting note
Intense and full aroma of ripe apples, peaches, citrus, plus herbal and earthy notes. Juicy, well-structured on the palate, the intense and ripe fruit is counteracted by the tannin structure, which results in a great balance.
Culinary recommendation
Goes well with more hearty dishes, vegetarian or with fish. For example pasta with tree nut pesto or fritto misto.
Vinification
Fermentation with our own yeasts (Pied de Cuve) on the mash. Aging in 2000 liter wooden barrels and in steel tanks on fine yeast, for a total of 30 months.
