Tasting note
Dark, almost black ruby red, impenetrable. On the nose, the use of wood is very dominant: chocolate, licorice, lots of ripe cassis, light spice. Powerful and rich on the palate, has a lot of substance and builds up its large body, with lots of chocolate and malt in the middle.
Culinary recommendation
Goes well with braised beef, rack of lamb, game ragout, aged pecorino.
Vinification
18 months in new French barriques.
