About the wine

Actually rooted and still connected in Welschschweiz, the Vuillemez family founded the Domaine in 2016 with Florent Barday at the helm of wine and advice from Christian Vessaz from Cru lHôpital, which is close to our hearts. And when you come from the watch industry like Vuillemez, you also bring with you a sense of time, an awareness of traditions and the knowledge that details and the moment matter. Half of 14 ha are freshly planted and were immediately farmed organically - certified organic since 2019. It is only in a few years and decades - and that is how long people think ahead in a relaxed and effortless way - will the vineyards provide the greatest pleasure. Until then, however, there will still be the old vines, which are usually traditionally aged in barrels, partly in concrete eggs, without any frills. The wines are juicy, generous, noble. Substance and depth instead of loud noise.

Tasting note
Snowmelt. Cool and warm, those almost white, cool mineral notes like snow and all around that warmth that heralds summer: rich, ripe, yellow fruit. On the palate, such as sparkling moist last patches of snow, the chalky mineral freshness, including the first herbs and the still golden rays of sunshine, the ripe, soft fruit, a comforting warmth, the breathing wood, so nourishing, a magic this freshness without freezing, everything so juicy, so smooth. Once again, it's great how beautifully ripe fruit and minerality are interwoven here!
Culinary recommendation
Recommended by Flaschenpöstlern: Mâcon-Villages Chardonnay AOC goes perfectly with asparagus, goat cheese and soft cheese.
Vinification
Selective reading by hand. Fermentation with the vineyard's own yeasts and aging for 8 months on the yeast in steel tanks. No additives.
