Tasting note
Straw yellow with golden reflections. The bouquet is typically fruity. The focus is on cedrate lemon, white peach and apricot pulp. Good body, warm, with an excellent balance of acidity.
Culinary recommendation
Ideal for refining Mediterranean dishes based on fish and crustaceans.
Vinification
The grapes are gently pressed and the obtained must ferments for 7 to 12 days in stainless steel tanks at a controlled temperature of 14 to 16 °C. The wine is then stored at 10 to 12 °C in stainless steel tanks, where the aging on the yeast (Sur-Lie) continues until the time of bottling.
