Tasting note
In the glass, the wine is bright golden yellow. The nose develops aromas of honey, apricot, dried plums and a touch of vanilla. On the palate, it is full-bodied with a pleasant sweetness, supported by lively acidity, which provides balance. The aftertaste is long and characterized by a fine minerality.
Culinary recommendation
Goes well with foie gras, blue cheese such as Roquefort or fruity desserts such as tarte tatin. It is also an excellent choice for Asian dishes with a slight spiciness or with aged hard cheese.
Vinification
The harvest is done manually, with only the berries affected by noble rot (Botrytis cinerea) being selected. After gentle pressing, fermentation takes place in stainless steel tanks.
