Tasting note
A lovely ruby red color that combines with the sparkle of blackcurrants, thyme flowers and a touch of balsamic. On the palate, it is fresh and silky and offers the fruitiness and balance that you would expect from its terroir in Faugères.
Culinary recommendation
This red wine goes well with grilled meat, game dishes, hearty stews or aged cheese. It is also an excellent choice with Mediterranean ratatouille.
Vinification
The grapes are carefully destemmed and then soaked for four weeks to produce a deep blush. After fermentation in stainless steel, the wine is aged for 28 months so that the aromas can blend and intensify.
