Tasting note
(sandstone, slate, quartz) iodic, graphite, thyme, minerals, firm, dense, very exciting, acidic, sparse, opens very slowly, lots of depth, pure Blaufränki.
Culinary recommendation
Goes well with game, deer, hare.
Vinification
Open vat fermentation, biological acid degradation in barriques. Natural vineyard yeasts (spontaneous fermentation). Ageing for 48 months in used barriques.
