Tasting note
Light golden yellow. Aromas of lemon balm, peach, honeydew melon and herbs. On the palate, you can find flint and pome fruit such as apricot. Nice drinking flow in the aftertaste.
Culinary recommendation
Goes well with fried veal, baked chicken, fried asparagus, Asian cuisine with a slight spiciness or mature soft cheese.
Vinification
Grapes from old vines with low yield, manual harvesting, spontaneous fermentation in stainless steel tanks and in large wooden barrels, long aging on fine yeast for more complexity.
