Tasting note
Straw yellow color. Subtle nose with stone fruit and ripe peach. Spicy and robust on the palate with a crunchy acidity in the aftertaste. Goes well with Thai or Mediterranean dishes and is a must with sushi and fresh seafood.
Vinification
The grapes were harvested in a cool early morning at 22.7 °C, gently crushed and pressed to a low pressure of 1.4 bar. The juice was allowed to rest for two days before fermentation. Fermentation took place over a period of 9 days and the wine remained on the yeast for two months before being filtered and bottled.
