Vinification
The grapes were picked at 22.2°C and spent eight hours soaking with their skins before being gently pressed at 1.4 bar. The juice rested for two days, then fermented naturally with wild yeast over two months. This wine aged on its lees for 15 months in new, small French oak barrels. Just before bottling, they blended in the Sauvignon Blanc component for that extra kick.
