Vinification
The sparkling wine is produced particularly strictly, from a mixture of Chardonnay and Pinot Noir, according to the traditional method. This includes hand harvesting, pressing whole grapes and secondary fermentation in the bottle. The bottles mature for 12 months before degorating.
