Tasting note
Straw yellow with greenish or golden reflections, fine and persistent perlage, bouquet with characteristic notes of bottle fermentation, hints of bread crust and dried fruit (almond, hazelnut, dried figs), spicy, fresh, fine and harmonious.
Vinification
Second fermentation in bottle with at least 18 months of aging on the yeasts; aging and maturing at least 25 months after harvesting. Pressure in the bottle between 5 and 6 atm.
