About the wine

Ilonka Scheuring from Margetshöchheim, Franconia, took over her family's winery in 2010 and has been at work ever since with great sensitivity, mindfulness and foresight, bringing out her feminine side in her wines, which are always authentically Franconian. In the “ETHOS Group”, she is strongly committed to resource-saving, sustainable viticulture and also lives this philosophy in her own 12 hectares of vineyards. Ilonka Scheuring focuses on environmental and nature conservation — for example, she heats her entire winery with wood and manages traditional orchards for game and bees. Her feminine intuition and sensitivity for high-quality wines earned her the title of “DLG Young Winemaker of the Year” back in 2011.

Tasting note
Ethos winemakers have picked their best Silvaner grapes by hand and turned them into a very special wine. He is not a typical Silvaner and does not try to be. It is opulent and wide, with lots of yellow drupes, some exotic fruits such as papaya and guava. With fine yeast reminiscent of brioche and slightly spicy notes. On the palate, the ethos is powerful yet elegant and says goodbye with a long finish.
Culinary recommendation
Our recommendation: The white wine tastes best at a slightly chilled 12°-14°C. The wine should be enjoyed during this period: now until 2025.
Vinification
The wine was spontaneously fermented in wooden and clay vessels on the grape skins, gently removed after 6 months and finally bottled in waste glass bottles, naturally cloudy and unfiltered.
