Tasting note
My complex and multi-layered bouquet with fruity aromas of red and dark berries such as cherries and plums, but also licorice, are complemented by dark chocolate and caramel.
Culinary recommendation
I taste great with meat from the smoker or the grill, but also hearty stews. Of course, I also go wonderfully with a cigar. A tip from me: Decant me an hour in advance and you'll get even more excited.
Vinification
Some of my grapes are harvested by hand when overripe, followed by a 15-20 day maceration followed by temperature-controlled fermentation. I then mature in new French oak barrels for 12 months.
