Tasting note
Complex, complex bouquet of ripe pears, bananas, some raspberries, plus fine roasted and brioche aromas. On the palate, a delicate, silky perlage and great, invigorating freshness.
Culinary recommendation
Perfect with seafood — from mussels to grilled pulpo or crustaceans such as lobsters or shrimps.
Vinification
The base wines, which include the best batches of Pinot Meunier and Chardonnay, are aged with lots of lees. Slow sedimentation clarifies them before the second fermentation takes place in the bottle. The aging process on yeast takes approximately 72 months.
