Tasting note
Elegant notes of pomegranate, ruby grapefruit and crushed raspberries. Crunchy and impressive on the palate with bright fruit and racy acidity, followed by a soft-structured central palate with a long and seductive finish.
Culinary recommendation
The rosé is an ideal accompaniment to light summer dishes with prawns, Portuguese sardines and salads with watermelon or pomegranate.
Vinification
The grapes come from trellises and bush vines from Paarl, which were planted on weathered slate soils with additional irrigation. The grapes were picked by hand at 20 and 22.5° Oechsle, destemmed, slightly crushed and macerated for 2 hours. The must was then removed from the coarse particles and fermented cold at 14°C.
